Ingredients:

  • 4 salmon fillets (about 6 oz each)

  • 2 tablespoons pure maple syrup (We suggest this one, light and flavourful)

  • 2 tablespoons olive oil

  • 1 tablespoon Dijon mustard

  • 1 tablespoon soy sauce

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme

  • 1 tablespoon of ORGANIC MAPLE SUGAR BARBECUE SPICES

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Lemon wedges (for serving)

  • Fresh parsley, chopped (optional, for garnish)

Instructions:

Preparing the Marinade:

In a small bowl, mix the maple syrup, olive oil, Dijon mustard, soy sauce, garlic powder, smoked paprika, dried thyme, salt, and black pepper until smooth.

Marinating the Salmon:

Place the salmon fillets on a tray or dish. Brush each fillet with the maple marinade, ensuring they are well coated. Let the salmon marinate for at least 15 minutes to absorb the flavors.

BBQ Cooking:

Preheat your barbecue to medium-high heat. Lightly oil the grates to prevent sticking. Place the marinated salmon fillets on the barbecue and cook for about 4 to 5 minutes on each side, depending on the thickness of the fillets. The salmon is done when it flakes easily with a fork and the internal temperature reaches 63°C (145°F).

Smoking:

Preheat your smoker to 120°C (250°F). Use apple or maple wood chips for a mild flavor. Place the marinated salmon fillets on the smoker grates and smoke for about 1 to 2 hours, or until the internal temperature reaches 63°C (145°F) and the fish flakes easily with a fork.

Serving:

Remove the salmon from the barbecue or smoker and let it rest for a few minutes. Serve the maple-glazed salmon with lemon wedges. Garnish with chopped fresh parsley if desired.
